Chinese chef's knives are highly versatile kitchen knives able to chop and dice a wide variety of foods. While they are referred to as "cleavers" due to their large, rectangular blade shape, they are not actually cleaves.

Compared to a true bone cutting cleaver, Chinese cleavers are relatively thin and delicate.
