Yanagiba, or simply yanagi, are extended blades featuring a single bevel, classically used for cutting sashimi and sushi with a single stroke due to their length. With an extra-thin edge profile, this knife guarantees a precise cut, avoiding any form of tearing or separation of the ingredients.
The yanagiba blade is generally consistent in its profile but there are multiple regional variants, such as Takohiki, Sakimaru, and Kiritsuke, each distinguished by its distinctive tip shape adapted to the particular cuisine of each area.
